Moringa, native to India, is considered a valuable plant owing to various essential phytochemicals, including polyphenols. Moringa polyphenols are known for their strong antioxidant properties. However, their susceptibility to degradation can hinder their absorption in the digestive system. In this study, encapsulation has been proposed to entrap polyphenols within carrier materials to enhance their bioavailability.
